Homemade Vegetable Soup

So I wanted to try and do my first recipe post. This is hella sloppy but I use to pig out on this soup as a kid. It was my favorite and being winter time I wanted to share.

Things you will need

  • A soup pot
  • Olive oil
  • 1 pound hamburger meat ( you can leave out if you like, completely optional)
  • 2 cans of tomato sauce
  • 1 can of tomatoe paste
  • 3-4 baking potatoes
  • 2 bags of your favorite mixed vegetables

Step one

Put olive oil in your pot and cook the hamburger meat

Now I put to much olive oil in this 😬(my bad). Honestly you should only need about a tablespoon or two. Let the olive oil heat a bit and add in the hamburger.

Step two

Add tomato sauce and paste to the pot (any brand, I use members mark) and stir in once the meat is cooked completely. You don’t want any pink pieces left. You can also add any seasonings you want too in at this point too.

Step three

Add in your potatoes. I take and cut mine into bite size smaller pieces. I use baking potatoes, but you can easily do russet potatoes if you’d like. There’s really no wrong way to do this.

Step Four

Add veggies. I use members mark frozen mixed vegetables, but you can use fresh or frozen. I’ve done several different concoctions to this soup. I use two bags to make sure there is enough.

Now your done. Mix everything together and let simmer for 20-45 minutes depending on the potatoes. Once those are soft your ready to serve.

      Broccoli and cheese soup is such a yummy combo. I don’t blame you there it is the perfect winter soup as well. Also super amazing if you have bread bowls from Panera too.
